Company Overview
Bonds Restaurant & Bar is part of The Eton Collection, a boutique hotel and restaurant group founded in 1998 by hotelier and businessman Peter Tyrie. His aim was to create a unique collection of boutique hotels and restaurants of outstanding quality in prime city centre locations. The five hotels and two restaurants are all highly individual but are all set within stunning historic buildings. His first Eton hotel was The Colonnade, which opened in 1999 in a Victorian Mansion; this was followed in 2000 by The Academy. In 2002 Quebecs opened and was followed shortly after by the opening of Threadneedles and Bonds. The Glasshouse, was the final edition and opened in 2003. Since opening in 2002, Bonds has listened to the needs of The City, tweaked and perfected the menu and wine list, and has received the commendable AA Notable Wine List and rated highly in the Zagat surveys.
Head Chef, Barry Tonks
Tonks has been cooking in some of London's finest kitchens for ten years. He began his career in the capital at The Dorchester hotel and then went on to work at two Michelin Star restaurants- Chapter One and Putney Bridge. He then became Senior Sous Chef at The Landmark under John Burton-Race where his restaurant had earned two Michelin Stars. His first Head Chef position was at McClements in Twickenham where he quickly made a big impression, earning his first Michelin Star, three AA Rosetta's, and a seven out of ten in The Good Food Guide, putting them in the top 25 rated restaurants in the UK. Now, Barry is set to make The City a dining destination in its own right with Modern French cooking that is nothing short of perfection.
Food & Beverage Director, Nick Tyrie
Tyrie's background is traditionally borne from hotels. He started his career at The Hotel Montalembert Paris as a trainee. Tyrie then moved on to work at The Savoy Group for 5 years and quickly progressed as Management Trainee. Experience of a pre-opening of Regents Plaza Hotel in Maida Vale grounded Tyrie with the nuts and bolts of launching a new operation, which would proove beneficial when opening Bonds. Moving from hotels and into the restaurant forum, Tyrie spent 18 months heading up The Atrium Edinburgh, and then managed the first Itsu in Chelsea London. Tyrie launched Bonds in July 2002 and has been the primary driver to its success.
Restaurant Manager, Emmanuel Vera
Vera has over 12 years international experience running restaurants. Previous roles have been as breakfast supervisor at The Little Nell Aspen Colarado, Manager at Marco Pierre White Quo Vadis London, Outlet & Events Manager at The St Regis Monarch Beach Resort & Spa California, and Assistant Director Food & Beverage at Bora Bora, French Polinesia.
Mixologist, Martin So
Martin''s style focuses on using high quality ingredients with interesting and eccentric natural flavours, with plenty of character and style. Prior to joining Bonds, Martin held the position of Bar Manager at Cobden Club and also worked for the Ignite Group at Eclipse West Hamstead. An MA in design, So trained at the Bas Bartending School and specialised in hospitality and classic cocktail training. So obtained his BIIAB National Certificate for Personal Licence Holders in 2006.
